The flagship of the joint venture between Constellation Brands Canada and Groupe Taillan of Bordeaux, vinified by French winemaker Pascal Madevon from a dedicated estate vineyard on the Black Sage Road in Canada's desert south. A thoroughly Bordeaux-framed wine: cabernet sauvignon dominant, classical in structure, designed for long cellaring. The French ownership and philosophy give it an unusual discipline for Canadian wine — restrained new oak, precise tannin management, no commercial concessions to approachability at release.

• main: Bordeaux-style Merlot-dominant blends with lamb is the most classical fine dining pairing in the world. The pistachio crust adds a textural bridge; the herbal notes in the crust complement the cedar and dark-fruit character of the wine. Natural jus echoes the wine's savouriness.
