About this product
One of France's most singular whites. A field blend from over 20 grape varieties — Clairette dominant — fermented in old foudres and aged two years in barrel. Deep golden; camomile, beeswax, dried herbs (garrigue), white peach, and a distinctive resinous quality. The finish is extraordinarily long and mineral. Drinks magnificently at 10–20 years.

The wine's beeswax, garrigue, and saline mineral depth match the iodine intensity of sea urchin; the oxidative complexity bridges the pasta richness.

Palette blanc's weight and herbal complexity is the ideal white for roasted poultry; the wine's years in old oak give it the structure to match the richness.

The wine's nutty, oxidative complexity from long barrel age mirrors the aged cheese's walnut and crystalline character; an exceptional combination.
