About this product
Single-village, single-producer Haitian artisanal cane spirit from St-Michel de l'Attalaye, Artibonite department. The Sajous family uses local Cristalino sugarcane, wild indigenous yeast fermentation in open wooden vats (7-10 days), and a simple copper alembic still. Imported by Luca Gargano of Velier (Genoa). Bottled at cask strength without filtration or colouring. Clairin Sajous is the entry point to understanding Haitian terroir — lighter and more accessible than the southern clairins, with remarkable clarity of sugarcane character.
