Domaine Armand Rousseau Gevrey-Chambertin Premier Cru Clos Saint-Jacques

Gevrey-Chambertin AOC, France
The finest Premier Cru in all of Gevrey — often outperforming many Grands Crus. Rousseau's Clos Saint-Jacques (2.7 hectares, 7,000 bottles) is one of Burgundy's most consistently magnificent wines. Fresh red cherry, violet, forest floor, mineral iron, and a silkiness that belies its power. Aged 18 months in French barriques (20% new). Drinks magnificently from 8 to 25 years.
complement
Clos Saint-Jacques' red cherry and silky structure is the model Pinot-with-duck pairing; the cherry reduction creates a flavour echo; root vegetable gratin's earthiness grounds the wine's complexity.

complement
The wine's forest floor and iron mineral character aligns with venison's gamey depth; lingonberry's tartness echoes the wine's natural acidity; juniper resonates with the Côte de Nuits character.
