Pommard's definitive wine — the Clos des Épeneaux monopole (5.3 hectares) produces Pinot Noir of unusual density and structural complexity. Clay-limestone soils give greater colour and tannin than typical Côte de Beaune: dark cherry, plum, iron, earthy forest floor, and a firm tannic backbone. Indigenous yeast, old French barriques. Needs 10 years minimum; magnificent for 25–30 years.
