Dominio de Pingus Pingus

Pingus is made from 500-800 cases per year from ancient ungrafted Tempranillo vines in La Horra, biodynamically farmed. The wine has extraordinary concentration, complexity, and aging potential — regularly scoring 99-100 points from international critics. The 1995 vintage put Peter Sisseck (and Ribera del Duero) on the world map. Extremely limited; prices rival Petrus and DRC.

lamb_roast
Pingus's extraordinary Tempranillo concentration demands the simplest, purest food. Lechazo — milk-fed suckling lamb, nothing else — lets the wine's complexity lead without competition.

meat_poultry
Cochinillo asado's crispy crackling and impossibly tender meat are calibrated for a wine of Pingus's power; the fat and the tannins create the classic tension-release pairing structure

beef_aged
The extraordinary depth of aged Basque beef chop (buey) requires Spain's most profound wine to match it. Pingus's graphite-dark plum intensity elevates the mineral beef to its finest expression.
