Fresh raphia palm wine (emu) from Enugu State in South-Eastern Nigeria, tapped from the cut flower stalk of the raphia palm (Raphia hookeri) and collected in traditional gourds. Raphia palm wine differs significantly from oil palm wine — it is milky-white in appearance due to suspended yeast, highly effervescent, mildly sweet when very fresh (morning tapping), and progressively more sour and alcoholic as the day progresses. By evening, it has developed noticeable sourness and higher alcohol. Traditionally consumed from shared calabash cups in social settings, ceremonies, and festivals. Central to Igbo hospitality customs and spiritual ceremonies.
