G.D. Vajra Dolcetto d'Alba DOC

Dolcetto d'Alba DOC, Italy
From 50-year-old Dolcetto vines on the Vergne hillsides above Barolo, this wine shows the variety's most appealing characteristics with the transparency of a careful Langhe producer. Deep purple-black with aromas of black cherry, liquorice, bitter chocolate, and violet. The palate is silky-textured with characteristically low acidity, plush fruit, and a bitter-almond finish that echoes both the soil and the grape.
complement
Dolcetto is the traditional Piedmontese table wine — served with egg-rich tajarin, it provides just enough tannic grip to cut through richness while its fruit doesn't compete with truffle's aromatics

complement
Dolcetto's low acidity and silky tannins are ideal with this Piedmontese summer classic — the wine's soft fruit doesn't overpower the delicate tuna-mayonnaise preparation

Bagna cauda — Piedmont's communal anchovy and garlic dip — with Dolcetto is a regional tradition: the wine's bitterness cuts through the anchovy intensity
