Henri Gouges Nuits-Saint-Georges Premier Cru Les Saint-Georges

Nuits-Saint-Georges AOC, France
The wine that would be a Grand Cru if the 1936 classification had included it — Les Saint-Georges lies on a band of Bathonian limestone between Nuits and Vosne-Romanée. Gouges's old vines produce dense, structured Pinot Noir: dark cherry, iron, forest floor, leather, and a limestone mineral depth. Aged 18 months in French barriques (25% new). Needs 10+ years; magnificent for 20–30.
complement
Nuits's earthy density and dark cherry depth is the classic companion for venison; blackberry jus creates a fruit mirror; parsnip purée adds a sweet, starchy balance to the wine's tannic structure.

complement
The wine's iron-mineral backbone and structured tannin handles the elaborate richness of beef Wellington; the foie gras's fat is cut by the wine's acidity; mushroom duxelles resonates with the earthy forest character.

complement
Nuits-Saint-Georges and Époisses is a classic Burgundian pairing — the wine's structure tames the pungent washed-rind cheese; the bread absorbs both wine and cheese's intensity into a complete bite.
