Aged Basi from the Ilocos Region of northern Luzon, Philippines, produced by the traditional method of fermenting pressed sugarcane juice with bark additives — particularly duhat (Java plum) and sampalok (tamarind) bark — in sealed clay pots. The Aged Reserve Basi undergoes 1–3 years of earthen vessel aging, developing complexity and a distinctive tannic character from the bark additions. The result is amber-hued with notes of dried fruit, earth, sugarcane, and a subtle astringency that makes it unlike any other fermented beverage in the world. An endangered UNESCO-recognised traditional beverage of the Ilocos people.
