Josko Gravner Ribolla Gialla Collio DOC

Collio DOC, Italy
The wine that launched the global orange/amber wine movement. Ribolla Gialla from 30-year-old Collio vines, fermented on skins for 6 months in Georgian qvevri buried in the earth, then aged 6 years in large Slavonian oak before bottling. Deep amber; extraordinary complexity of dried apricot, beeswax, walnut, orange peel, and an iron-mineral core. Decades of ageing potential.
complement
Gravner's amber wine is uniquely suited to hard aged cheeses — the tannins from skin contact cleanse the fat; truffle honey bridges the wine's earthy, oxidative depth.

complement
The wine's amber tannin structure and oxidative complexity handles the roasted chicken's richness; the skin-contact phenolics cut through the honey's sweetness.

complement
The wine's orange-peel bitterness and structured tannins match pork belly's richness; the bitter citrus glaze harmonises with Ribolla's inherent astringency.
