Koshi no Kanbai's most accessible expression but not its least impressive: the Honjozo Sai (meaning 'Talent' or 'Gift' — an acknowledgment of Niigata's natural brewing gifts) uses a small distilled alcohol addition to achieve the dry, clean profile that is Niigata's signature. The Sai is the gate through which guests enter the Koshi no Kanbai world — and like all great entry expressions, it contains the DNA of everything above it.
