Katokichibee Shouten produces Born — a brand that combines Fukui's pristine snow-melt water, extreme polishing ratios, and traditional pressing methods to produce Junmai Daiginjo of international calibre. The brewery's isolated Fukui location has paradoxically enabled innovation: free from Niigata or Nada tradition's gravitational pull, Born pursues its own vision of sake perfection.

Born's international success, particularly in Europe, made it one of the first truly premium sake exports to achieve recognition in French fine dining. Born Gold and Born Dream consistently appear on best-sake lists globally. The fukurotsuri pressing method — gravity-only, no mechanical pressure — produces the clearest, most refined sake possible from a given polishing ratio.
