Wuyi Xingcun zhengyan production is the pinnacle of Chinese oolong — and arguably the most complex tea in the world. The rock terroir's mineral signature (the yanwei, or rock flavour, which is both a taste and a sensation of extended finish) is not found in any non-rock-area Wuyi production. For sommeliers, understanding the difference between zhengyan (authentic rock), ban yan (half-rock), and zhou cha (outer area) in Wuyi is as important as understanding premier cru versus village Burgundy.
