Phoenix Dancong is the most complex oolong produced outside of the Wuyi Mountains — each named variety (Mi Lan Xiang, Ya Shi Xiang, Ba Xian) carries a distinct aromatic fingerprint, and the comparison of three or four varieties side-by-side is one of the world's great comparative tasting experiences. For sommeliers, Dancong tasting is the Chinese tea equivalent of blind comparative vertical tasting: an exercise in aromatic identification and flavour memory.
