Clairin Sajous
Philosophy
Single-village clairin from St-Michel de l'Attalaye in the Artibonite department of Haiti. The Sajous family uses local Cristalino sugarcane variety, wild yeast fermentation (7-10 days in open wooden vats), and a simple copper alembic still. Each batch is numbered and dated. Imported to international markets by Velier (Luca Gargano, Genoa).

The Artibonite Valley Cristalino cane produces a slightly lighter, more approachable clairin than the southern producers.
