Single-village clairin from St-Michel de l'Attalaye in the Artibonite department of Haiti. The Sajous family uses local Cristalino sugarcane variety, wild yeast fermentation (7-10 days in open wooden vats), and a simple copper alembic still. Each batch is numbered and dated. Imported to international markets by Velier (Luca Gargano, Genoa).
Clairin Sajous is the entry point for many professionals discovering Haitian terroir spirits. Its clarity and relative accessibility make it the ideal introduction to the category. The Artibonite Valley Cristalino cane produces a slightly lighter, more approachable clairin than the southern producers.
