Black Oystercatcher was one of Elim's first estates, planted by Dirk Human on the wind-lashed Agulhas Plain in 2002, producing Sauvignon Blanc, Syrah, and Bordeaux blends of striking cool-climate character from ancient shale soils.

Elim's most internationally recognised producer; Black Oystercatcher's Blanc de Noir and Sauvignon Blanc have received widespread critical praise for demonstrating the ward's unique cool-climate potential.
