Marañones focuses exclusively on ancient mountain Garnacha from Sierra de Gredos granite at 700–900m, working with natural fermentation, zero added sulphur, and old clay vessels (tinajas) alongside aged oak for wines of maximum terroir expression.

One of the key producers defining the Gredos natural wine aesthetic; Marañones' Peña Caballera and Labros old-vine Garnacha have appeared on major natural wine lists in London, Copenhagen, and New York.
