Armand Debelder's 3 Fonteinen (Three Fountains) in Beersel, Pajottenland, is the benchmark for gueuze blending — the art of selecting lambics of different ages from different producers and blending them into a refermented, Champagne-like gueuze. The 2009 disaster (a broken thermostat destroyed 50,000 bottles of refermented gueuze) nearly ended the company but created the 'Brotherhood of the Senne' — a community fundraising effort that saved the brewery and established 3 Fonteinen's legendary status.
