Dujac is the reference estate for whole-cluster fermentation in Burgundy. Jeremy Seysses is also the founder of La Paulée — the annual charity dinner in New York that raises funds for wine education. The wines are elegant, aromatic, and consistently compelling.

Jacques Seysses founded Dujac in 1967 — one of the first 'outsider' domaines (Seysses was not from a wine-making family). Now run with his son Jeremy. The defining style marker is 100% whole-cluster fermentation — uncrushed grape bunches that release carbon dioxide, maintaining purity and freshness. The wines are lighter in colour than peers, highly aromatic, and more translucent in style. Key holdings: Clos de la Roche, Clos Saint-Denis, Bonnes Mares, Échézeaux, Chambolle Premier Crus.
