The reference Chablis producer — traditional methods, barrel ageing (in old oak, not new), no malolactic fermentation (preserving the natural acidity of Kimmeridgian-terroir Chardonnay). Jean-Marie Raveneau now runs the estate with his son. The wines are produced in tiny quantities from exceptional Grand Cru and Premier Cru parcels. No concession to fashion — the mineral, saline, long-ageing style has not changed in 50 years.
Raveneau is to Chablis what DRC is to Vosne-Romanée — the undisputed summit. The Les Clos Grand Cru ages 20+ years. Production is tiny; the wines appear at auction for $400–$800 CAD per bottle.
