Philosophy
Fermented in pressurized autoclave at controlled low temperature with selected yeasts, the must halted mid-fermentation to preserve residual sugar and delicate aromatics. Hand-harvested grapes, estate-grown, refrigerated immediately upon pressing, expressing mineral purity through precision chemistry rather than maceration or wood.
Reputation
Founded in the 1940s by Redento Dogliotti in Castiglione Tinella, between Langhe and Monferrato, Azienda Agricola Caudrina entered its defining period in the late 1970s when Romano, Redento's son, rejected the family tradition of selling must to industrial producers and instead began bottling the estate's own Moscato Bianco—a radical choice that pioneered the category of grower-bottled Moscato d'Asti.
