Philosophy
Native fermentation in stainless steel, extended maceration (up to forty days for Barolo nebbiolo), maturation in large Slavonian oak casks and cement vats without filtration. Natural stabilisation through winter cold: a cellar philosophy of minimal intervention guided by tradition from his grandfather Saverio.
Reputation
Cascina Fontana was established in 1995 by sixth-generation winemaker Mario Fontana and his wife Luisa in the hamlet of Perno, near Monforte d'Alba in the heart of Barolo. The family's viticultural presence in Castiglione Falletto extends back to the seventeenth century; Mario revived this ancestral tradition after his grandfather Saverio gifted him the property.
