Philosophy
Cold settling and pneumatic pressing followed by temperature-controlled stainless steel fermentation preserve the singular minerality and fresh aromatics of Provence's high-altitude terroir. Peyrassol's rosés in particular—whether pale and elegant or concentrated—remain models of precision: dry, silky, with saline minerality and citrus finesse that speaks directly to clay-limestone soils and Mistral air.
Reputation
In 1204, the Count of Provence donated these commanding foothills of the Massif des Maures to the Knights Templar, founding a commanderie that would anchor the region's viticulture for over eight centuries. The estate has passed through the hands of monastic orders, Provençal families, and most recently into the stewardship of Philippe Austruy in 2001, who commissioned a meticulous renovation and organic conversion of the vineyard whilst preserving the estate's sacred history.
