Philosophy

Cold settling and pneumatic pressing followed by temperature-controlled stainless steel fermentation preserve the singular minerality and fresh aromatics of Provence's high-altitude terroir. Peyrassol's rosés in particular—whether pale and elegant or concentrated—remain models of precision: dry, silky, with saline minerality and citrus finesse that speaks directly to clay-limestone soils and Mistral air.

Reputation

In 1204, the Count of Provence donated these commanding foothills of the Massif des Maures to the Knights Templar, founding a commanderie that would anchor the region's viticulture for over eight centuries. The estate has passed through the hands of monastic orders, Provençal families, and most recently into the stewardship of Philippe Austruy in 2001, who commissioned a meticulous renovation and organic conversion of the vineyard whilst preserving the estate's sacred history.

AllocationCommercial bottling began 1977 (Rigord era); current organic certification dates from 2022 vintage onward per Ecocert. Succession confirmed: Philippe Austruy owner (2001–present), nephew Alban Cacaret general manager (2003–present). Wilson Daniels became primary US distributor in February 2021; Rosenthal Wine Merchant held portfolio earlier (through approximately 2017–2020 based on Provence WineZine article dated April 2017 noting ~100,000 bottles imported annually). Production volume of ~500,000 bottles cited in 2017 Provence WineZine (85% rosé, 10% red, 5% white). Vineyard holding estimates vary slightly (80–95 hectares under vine within 850+ hectare estate) depending on source; using 90 hectares as middle estimate. No evidence of biodynamic certification found despite some retailers tagging as such; only Ecocert organic certification confirmed from 2022 vintage forward. High-altitude terroir (220–350m) is notable and uncommon for Provence.
