Cold skin maceration lasting 12 to 48 hours in cement tanks, yielding deeply coloured rosés of vinous structure and mineral precision. Indigenous yeasts and minimal intervention reveal the terroir's sand and galets roulés with remarkable clarity and restraint.
Reputation
Eugène Demoulin acquired this elegant eighteenth-century estate in 1936, the very year Tavel achieved appellation status—a coincidence that would define four generations of devotion to the art of serious rosé. The vineyards, planted on sand and rounded stones in the hills of Montagne Noire, face conditions nearly identical to Châteauneuf-du-Pape across the river, yet the Demoulins have chosen to express their terroir as only Tavel permits: through pink wine of depth and savory garrigue.
