Philosophy
Multiple selective harvests of botrytized fruit over extended picking periods; slow fermentation in 100% new French oak for 2-6 weeks to preserve residual sugar of 120-150 g/L; maturation in exclusively new oak barrels for 24-30 months in temperature-controlled cellar with indigenous yeasts only. Each parcel vinified separately, blended after élevage for exceptional complexity and longevity.
Reputation
Château d'Yquem descends from feudal tenure granted to Jacques de Sauvage in 1593, becoming full family property under the Sauvage and later Lur-Saluces dynasties until 1999. Perched atop Sauternes' highest elevation, the estate's mosaic of gravelly-clay terroir and the Ciron's morning fogs conspired across four centuries to master Botrytis cinerea, establishing it as the sole Premier Cru Supérieur in the 1855 classification.
