Philosophy
Night harvest to preserve acidity and delicate aromatics. Gentle pneumatic pressing with separate vinification by varietal in temperature-controlled stainless steel, followed by several months aging on fine lees. The cellar team conducts meticulous multi-stage blending sessions, treating the juice palette like a perfumer's nose, to achieve profound minerality and silken freshness characteristic of the terroir.
Reputation
In 1204, the Count of Provence donated the estate to the Order of the Knights Templar, establishing Peirasson as one of their Provençal commanderies. A first harvest was recorded in 1256; the property remained a sanctuary for pilgrims bound for the Holy Land through centuries of ecclesiastical stewardship before entering secular ownership during the French Revolution.
