Philosophy
Estate-grown Syrah from gravelly, alluvial soils worked without herbicides or pesticides. Maxime employs 20–30% whole cluster fermentation with natural yeast and ages in used Burgundy oak, allowing earlier approachability than his father's more structured style, yet maintaining mineral precision and silky elegance characteristic of the Graillot lineage.
Reputation
Established in 2004 by Maxime Graillot, eldest son of the legendary Alain Graillot, Domaine des Lises occupies a single gravelly plateau near Beaumont-Monteux in southern Crozes-Hermitage. Maxime deliberately chose independence over inheritance, acquiring young vines and immediately converting to organic farming while developing a winemaking philosophy that prioritizes aromatics and drinkability over his father's whole-bunch intensity.
