Spontaneous fermentation with minimal sulfur intervention; unfined and unfiltered bottling. Extended skin contact in select cuvées—from eight days in rosé to four months in amphora-aged orange wines. Volcanic terroir expressed through hands-off winemaking without added yeasts or adjuncts.
Reputation
Rooted in the volcanic island of Lemnos, the winery crystallizes three generations of vineyard stewardship by the Garalis and Markakis families, whose ancestors settled in Agios Dimitrios following the Asia Minor Catastrophe of 1922. The winery itself was established in 2000 with its first harvest in 2007, emerging from a deep tradition of cultivating Limnio—the world's oldest referenced grape variety—and Muscat of Alexandria upon mineral-rich volcanic soils.
