Philosophy
Block-by-block parcellation and minimal extraction on skins with daily two-minute pump-overs. Whole-berry ferments with 18–24 days skin contact; 18–24 months French oak (typically 25% new). Terroir expression through polyface integration: vines rooted in Careaga sandstone draw deep for structure, their tannins mineralised by the estate's unique high-desert sand. The work reflects viticulture as soil science.
Reputation
Jonata honours the 1845 Spanish land grant Rancho San Carlos de Jonata—a name borrowed from the Chumash word for 'tall oak'—on an audacious site of 586 acres, 84 planted to vines. The estate sits at the heart of Ballard Canyon, an emerging pocket within Santa Ynez Valley whose Careaga sandstone soils challenged growers for decades before Matt Dees and his team proved them capable of world-class expression.
