Philosophy
Hand-harvested grapes pressed to first-juice only, with slow temperature-controlled fermentation in steel tanks followed by bottle-aged secondary fermentation. Sparkling wines rest on lees a minimum of fourteen months, developing fine persistent bubbles and herbaceous minerality characteristic of Penedès limestone soils.
Reputation
The Ventosa-Mañé family has stewarded vines in the Penedès since 1941, witnessing the entire evolution of Cava from its nineteenth-century origins to the modern era. Their estate sprawls across east and south-facing plateaus where Mediterranean sun and complex microclimatic zones coax optimal ripeness from Xarel·lo, Macabeu, Parellada, Chardonnay, Pinot Noir and Trepat.
