Kally

United States
Verjus pressed from early-harvested, organically farmed Chardonnay or Cabernet Sauvignon, combined with fruit juices, botanicals, and tea extracts. No fermentation; unfermented juice provides structure and mouthfeel absent in alcohol-free alternatives.
Kally emerged in 2022 from the Portola Valley kitchen of Katie and Scott Mitic, former technology executives who sought a sophisticated nonalcoholic beverage to accompany their meals. Rooted in California's Sonoma County, the house harnesses unfermented verjus—the tart juice of young grapes—as its structural foundation.
AllocationCRITICAL: Kally is NOT a wine producer. It manufactures non-alcoholic verjus-based beverages (unfermented juice of early-harvest grapes), not wine. Product does not undergo fermentation and contains zero alcohol. This disqualifies it from the Provenance wine canon unless the brief scope explicitly includes beverage alternatives. Recommend exclusion. Founded 2022 by Katie and Scott Mitic. Self-distributes in California; available via GoodEggs, Instacart, retail partners (K&L Wines, Erewhon, etc.). Certified B Corp. Served at 15-20 Michelin-starred restaurants including SingleThread (Healdsburg), Saison, Benu. No UK or Japan importers identified; US distribution primarily direct-to-consumer and regional retail. Production volume not disclosed. Grape sourcing: Eco Terreno Vineyards (Alexander Valley), Lolonis Vineyard (Redwood Valley), and verjus consultation from Fusion Verjus (Jim Neal, Napa Valley). Parent entity: 'SomethingElse Inc.' (dba The Modern Drink Company). Producer type cannot be classified as conventional wine estate/negoce/cooperative. Recommend separate review framework or exclusion from wine-specific canon.
