Controlled appassimento of brief duration—20 days rather than the traditional prolonged drying—preserves the freshness of the grape while achieving structural concentration. Every bottle is a single vineyard expression, with meticulous hand-pruning at 7,500 vines per hectare limiting yields to 1.2 kg per plant, establishing wine of elegant refinement rather than mere power.
Reputation
Founded in 1996 by patriarch Bruno Sartori in Mezzane di Sotto, Roccolo Grassi represents a relaunching of viticulture in the eastern Valpolicella hills, where his oenologist son Marco and daughter Francesca assumed stewardship in 2003. Sited on volcanic-basaltic slopes at altitudes reaching 310 metres, the estate produces wines of uncommon terroir definition through meticulous farming and philosophical restraint in the cellar.
