Philosophy
Estate-grown Pinot Noir and Chardonnay fermented with native yeasts and minimal intervention. Slow fermentation in neutral oak and stainless steel, bottled unfined, unfiltered, with minimal sulfites. The wine honors the iron-rich volcanic terroir and eastern exposure of the Eola-Amity Hills.

Salem Wine Company represents the accessible expression of Seven Springs Estate, a historic vineyard planted in 1984 by Oregon pioneer Al MacDonald on the iron-rich volcanic soils of the Eola-Amity Hills. Since 2014, the property has been farmed biodynamically under the stewardship of Rajat Parr and Sashi Moorman, masters of restrained winemaking devoted to mineral expression and place.
