Practice
The most celebrated Mosel estate for Auslese and above — the J.J. Prüm house style is deliberately old-fashioned: high residual sugar, very high acidity, and a sulphur-rich, reductive youth that gives way to petrol (TDN — trimethyl-1,3,5-trioxane from Riesling's degraded carotenoids), honey, and dried apricot over 20+ years. Wehlener Sonnenuhr (a carved sundial in the vineyard) is their monopole Grand Cru equivalent. Katharina Prüm runs the estate in the traditional family style — minimal cellar intervention, no temperature control, fermentation running through winter.
