Domaine des Baumard is one of Savennières's most important estates — a 35-hectare holding that encompasses the prestigious Clos du Papillon, Clos Saint-Yves, and La Genièvre parcels on Savennières's volcanic schist slopes. Unlike the biodynamic extremes of Nicolas Joly's Coulee de Serrant, Baumard's approach is precise and technically meticulous: temperature-controlled ferment, indigenous yeasts, and careful sulphur management.
