Patrice Lescarret's biodynamic estate on the limestone Causse plateau north of Gaillac, producing some of the region's most intellectually serious wines. The estate uses only indigenous varieties and traditional methods — low sulphur, indigenous yeasts, no fining or filtration. Their Peyrouzelles (Braucol) and Rasdu (Duras) reds show what Gaillac's obscure native varieties can achieve with minimal intervention.
