Tom Lubbe's biodynamic estate in the village of Calce, producing some of Roussillon's most sought-after natural wines. Lubbe — a South African-born winemaker — works with old-vine Grenache Gris, Macabeo, and Carignan on white granite and gneiss soils in the Côtes Catalanes. The wines have a distinctive freshness, salinity, and aromatic complexity that has attracted a devoted following in the natural wine world.
