The reputation — the story that sells at the table
Koshi no Kanbai was for decades almost exclusively a local Niigata treasure — the sake families and restaurants of Niigata drank it themselves and exported little. Its reputation spread via word-of-mouth among sake enthusiasts until demand forced limited export. Now considered one of the three pinnacle Niigata sakes alongside Kubota and Hakkaisan.
Practice
Ishimoto Shuzo produces Koshi no Kanbai — a sake so esteemed in Japan that it remained virtually unavailable outside the prefecture for decades. The brewery's philosophy centres on extreme refinement through polishing, temperature control, and restraint: every production decision serves the goal of perfect purity of expression.
