Dominio do Bibei Lalama Ribeira Sacra

Ribeira Sacra, Spain
The flagship wine from Ribeira Sacra's most prestigious estate — a blend of Mencía, Garnacha Tintorera, Mouratón, and Brancellao from ancient terraced vineyards on granite and schist soils in the Bibei valley. Dark, complex, and mineral with black cherry, dried flowers, iron mineral, graphite, and an earthy depth that speaks of very old vines and extreme terroir. Fermented with indigenous yeasts in traditional open vessels, aged in French oak. A wine of rare authenticity.
complement
Galician lamb from the same mountain landscape as the vineyard — the wine's floral, mineral character elevates delicate mountain lamb. Garlic scapes add aromatic depth without competing.

complement
The wine's earthy, mineral depth mirrors the forest mushroom character. Truffle oil bridges to its aromatic complexity while polenta provides a base that absorbs both.
