Kubota Manju Junmai Daiginjo

Niigata, Japan
The pinnacle of the Kubota range and one of Japan's most recognised premium sake expressions globally. Manju (meaning 'ten thousand') is made from Yamada Nishiki rice polished to 33% remaining, fermented with Niigata's ultra-soft snow-melt water at near-freezing temperatures. The result is the tanrei karakuchi (light-dry) ideal taken to its extreme: perfect clarity, crystalline delicacy, and a finish that extends like a long musical note. This is Niigata's definitive statement.
