Kubota Senju Tokubetsu Honjozo

The everyday brilliance of the Kubota range — and arguably the most important sake in the lineup for restaurant by-the-glass programmes. Senju (Thousand Longevities) uses a small addition of distilled alcohol (honjozo style) to heighten aromatic lift while maintaining the Niigata tanrei character. At 55% polishing remaining, this is honest, food-first sake that does exactly what great house sake should: disappear behind the food until you need it, then refresh with exquisite precision.
