Kuro Kirishima Imo Jochu 25°

The benchmark imo (sweet potato) shochu — Japan's most commercially successful expression of Kagoshima's defining spirit. Kuro Kirishima (Black Kirishima) uses Kogane Sengan sweet potatoes from Kagoshima's volcanic Shirasu soil and black koji (Aspergillus luchuensis) — the traditional Kyushu koji that produces strong citric acid and the characteristic tartness of authentic imo shochu. Single pot distillation preserves every aromatic compound from the sweet potato fermentation. This is the otaku standard against which all other imo shochu are measured.
