Komasa Jozen Imo Shochu 25°

Komasa's Jozen expression uses a distinctive white koji fermentation — departing from Kagoshima's traditional black koji to produce a lighter, more elegant imo shochu. The white koji's gentler acidity allows the sweet potato's natural floral and fruity notes (usually overwhelmed by black koji's assertive tartness) to emerge clearly. An unusual and sophisticated take on the imo shochu category — the Fushimi to Kirishima's Nada, if the analogy is allowed.
