GT's Synergy Organic Kombucha — Gingerade
About this product
GT's Living Foods was the company that created the commercial kombucha category in the USA (1995) — founder GT Dave began selling his mother's home kombucha recipe after it helped her during cancer treatment. GT's Synergy Gingerade is the brand's most recognisable expression: raw, unfiltred kombucha with fresh pressed ginger juice, producing an intensely gingery, pleasantly acidic, slightly effervescent drink that is genuinely complex and food-pairing worthy.

sushi
The ginger-acid character of GT's Synergy Gingerade is structurally similar to the pickled ginger served alongside sashimi — both are acidic ginger preparations that refresh the palate between bites of raw fish. The live culture acid of kombucha bridges to the clean umami of sashimi grade fish without competing.

cheese
The acetic-lactic acid character of kombucha bridges to the lactic richness of Brie in the same way that a sour beer bridges to soft French cheese. The ginger provides enough spice to contrast with the cream fat. The effervescence refreshes the palate between bites. An elegant NA cheese pairing.
