Selvapiana Vigneto Bucerchiale Chianti Rufina DOCG Riserva

Chianti Rufina DOCG, Italy
Italy's great undervalued masterpiece — Selvapiana's Bucerchiale Riserva from single-vineyard galestro-limestone soils at 350m in the Sieve Valley. Large Slavonian oak, minimal intervention. Pale ruby with garnet; intense dried cherry, tobacco, herbs, iron, orange peel, and a mineral-limestone freshness rare in Sangiovese. Deceptively light in colour; enormous flavour and ageing capacity of 30+ years.
complement
The supreme Tuscan pairing — aged Chianina bistecca with Rufina Sangiovese; the wine's Florentine historical connection and dried cherry-iron depth aligns with the charred T-bone; the olive-oil and salt amplify the wine's mineral freshness.

complement
Sangiovese's high acidity and cherry-herb complexity is the definitive match for wild game ragù; pappardelle's width carries the rich sauce; Parmigiano adds umami depth that Sangiovese's tannins absorb.

complement
Rufina's Sangiovese and Tuscan sheep cheese is a regional pairing of the first order; truffle's luxury echoes the wine's own earthy complexity; chestnut honey bridges the cherry fruit.
