Paul Cluver Seven Flags Pinot Noir Elgin WO

Elgin WO, South Africa
South Africa's most elegant Pinot Noir — Paul Cluver's Seven Flags (named for the flags of Elgin's seven founding families) from the cool De Rust estate. The valley's maritime-apple growing conditions produce Pinot Noir of extraordinary freshness: transparent ruby; red cherry, fresh rose, dried herbs, and a shale mineral precision rare in South African reds. Aged 14 months in old French barriques. Elegant at 3 years; complex at 8–12.
complement
Elgin Pinot Noir's red cherry freshness and mineral precision matches duck's richness beautifully; plum and star anise create an Asian-spice bridge that complements the wine's delicate fruit.
