Rihaku Wandering Poet Junmai Ginjo

Matsue, Japan
Rihaku Shuzo's Wandering Poet Junmai Ginjo from Shimane Prefecture on Japan's Sea of Japan coast — a sake with a poetic name derived from the Tang Dynasty Chinese poet Li Bai (Rihaku in Japanese). Shimane's sake culture is ancient; the region has been producing sake since the Kojiki era. The Wandering Poet is a sophisticated, medium-dry ginjo with a stone fruit and floral character appropriate for fine dining pairing. One of the more distinctive Japanese sake regularly available in BC specialty sake lists.

Yakitori's chargrilled savoury character is amplified by sake's umami backbone. Yuzu kosho's citrus-chilli note is bridged by the sake's clean finish rather than clashed by alcohol weight. A casual izakaya context applied to premium sake.

Rich tonkotsu broth (pork bone collagen, extreme fat content) requires a beverage that cleanses rather than complements. The Wandering Poet's dry, precise character cuts through the fat without competing with the broth's depth. Its pear and subtle earth notes harmonise with chashu pork's sweetness. Black garlic oil's intensity is managed by the sake's acidity. A cleansing pairing of exceptional utility.
