Kölsch (Cologne) and Altbier (Düsseldorf) are Germany's two locally protected top-fermented, cold-conditioned hybrid styles — the rivalry between the cities and their beers is one of Germany's great cultural debates. Kölsch is the more internationally known: pale, delicate, served in tiny 0.2L Stange glasses that are perpetually refilled. The Brauhaus (traditional brewery-restaurant) culture of Cologne — with the Köbes serving in perpetual rounds — is as formalised as any tea ceremony. Altbier is darker, more bitter, more assertive — Düsseldorf's answer to Munich's lager tradition.
