Bairrada, south of Porto, is dominated by Baga — one of Portugal's most site-specific indigenous varieties. Baga's extreme tannin and acidity demand extended ageing; in clay-limestone soils with Atlantic influence, it produces wines of extraordinary longevity (30–50 years). Luis Pato, the region's most visible advocate, has spent decades persuading the world that Baga, like Barolo's Nebbiolo, rewards patience.
